Turkey Pasta Salad
Ingredients
- 4 cups cooked fusilli or other pasta 1 L
- approx. 6 oz./180 g. raw
- 3 cups Smoked Turkey Breast-cubed 750 mL
- 1 half cucumber cut in cubes 1 half
- 2 Tomatoes chopped 2
- 1 Red or yellow pepper thinly 1
- sliced
- Dressing:
- ½ cup Wine vinegar 125 ml
- ¼ cup vegetable oil 50 ml
- 1 tbsp brown sugar 15 ml
- 1 tbsp parmesan cheese 15 ml
- 1 tsp basil dried 5 ml
- 1 tsp garlic salt 5 ml
- Fresh parsley for garnish
Instructions
- In a large bowl, combine all salad ingredients except tomato.
- In a small bowl, thoroughly mix dressing ingredients. Add dressing to salad and toss.
- Refrigerate 1-2 hours to blend flavours.
- Mix in tomato just before serving
