Turkey Stewed in Beer
Ingredients
- 454 g 1 lb boneless, skinless turkey thigh
- 15 mL 1 tbsp vegetable oil
- 1 medium onion chopped
- 2 mL 1/2 tsp ground pepper
- 2 mL 1/2 tsp coriander
- 2 mL 1/2 tsp thyme
- 1 bay leaf
- 1-355 mL 12 oz can beer (medium-dark ale)
- 2 medium potatoes cubed
- 250 mL 1 cup carrots, cubed
- 250 mL 1 cup celery, chopped
- 125 mL 1/2 cup frozen peas
Instructions
- Cut turkey into small, bite-sized cubes and set aside. In a medium or large stockpot, heat oil over medium-high and sauté onions.
- Add turkey and cook for 3-4 minutes, until browned.
- Add seasonings and mix well. Pour beer into pot and heat until boiling, and then add all vegetables, except peas.
- Simmer for 1-2 hours or until turkey is very tender.
- Add peas and heat thoroughly. Remove bay leaf before serving.
